2009年9月13日 · Some sharpeners assume all Wusthof Classics get a 20* angle, but the Santoku is an exception to the rule. Unfortunately some sharpeners are not set up to sharpening at 15*. If that's the case with yours, you can either find a new sharpener or accept the fact that your knife has already been reset to 20*, and you've managed to live with it this far.

2013年11月3日 · The pull through sharpener that Wustoff makes for their knives works very well, and are quite affordable. The honing steel simply straightens the existing edge on the knife, this does make the edge sharper but it wont put a new edge on. Using a water stone or oil stone can ruin your knife, and it is very messy and time consuming.

But still the curve of the blade starts a little later then the Wusthof but still isent really a good knife for chopping style movements or mincing.

It a JA Henkels Twin sharp for about $20 and Wusthof makes one that appears similar for the same price.

2018年1月13日 · I've narrowed down to the Chef's Choice Trizor XV and Wusthof 2933 PEtec electric sharpeners (also made by Edgecraft - Chef's Choice). I do not plan to obtain any 20-degree "classic" knives. I know the Trizor sharpens to a convex 15-degree angle and the Wusthof a 14-degree "PEtec" angle. I cannot decide which model would best suit my needs.

I've only had to sharpen the Chef's knife once since January and I hit it with a Wusthof Honing Steel at the beginning of the day, and it takes care of business.
